
I don't fancy myself much of a baker, I am really a cook at heart (I can't stand to measure). But In the spirit of moving away from processed and pre-packaged foods I am doing A LOT of baking for this round of Freezer cooking. There is one exception and that is our favorite blueberry muffins, they are the Krustez Fat Free Mix and are only 2 WW points even using the weight watchers site I could not find a recipe that could achieve that point value and we all love them so I will wait until next month to try replacing them! (If you have a great low fat muffin recipe I am all ears!)
Here were my"Breakfasts" goals:
· 3 dozen blueberry muffins
· 2 dozen orange oatmeal muffins
· 2 dozen sausage egg cups
· Huge batch of homemade buttermilk pancake mix

I made these Orange Oatmeal Muffins from the Weight Watchers site here. I did make 2 dozen and they were really good, but I think if I made them again I would add some cranberries to them.
I made these same sausage and egg cups for my husband awhile ago. He loved them so much he requested them again for this cooking week. You can see the recipe here. They used precooked sausage and since I was trying to avoid nitrates I decided to try taking a mixture of ground beef and turkey and and add a few seasoning like fennel and thyme to add that sausage flavor. I made 3 dozen all for him!
I made a HUGE batch of this buttermilk pancake mix just like I hoped to! I did 4 times the recipe here (3 cups went to use in the orange muffins above)
