Freezer Cooking: Clumpy Granola


Here is another non-freezer "freezer cooking" recipe! Last month I made granola using Alton Browns Recipe (you can see that post here). Reader Sarah DJ left a comment that she had used Alton's recipe in the past until she found this recipe which allowed for a much chunkier granola. Since I am a granola novice I decided to give the new recipe a shot this month!



Mix together in a large bowl:
4 cups rolled oats
1/2 cup rice flour
1/2 cup chopped nuts
1/2 cup coconut
1/2 teaspoon salt
1 teaspoon cinnamon


In a medium size bowl, mix until smooth:
1/2 cup honey
1/2 cup peanut butter (I used our home made!)
1/2 cup oil
1 teaspoon vanilla


Pour the wet ingredients onto the dry and mix very thoroughly. Spread onto a big cookie sheet.Bake at 315 degrees in increments of 10 minutes. Check every 10 minutes but Do NOT stir. The goal is to make clumps! The original recipe says it will take about 40 min, mine took about 30. Then break into clumps and store in an air tight container. The verdict: I really liked this! I found it to be quite different from the version I made last month and I definitely enjoyed the clumps. I think next month I may try to make up my own and see if I can combine the things I like about each one!
