I starter Freezer Cooking Day yesterday by making my beans in the crock pot. Many people have many different opinions about this, I have done it many times and this is what I do:
1) Rinse and sort through the beans
2) Put them in the crock pot and fill with water
3) Turn crock pot on high and cook until tender
"Until tender" time will vary depending on how many beans you are cooking and how large of a crock pot you were using, I made 1/2 as many white beans as black beans and they cooked in about 4 hours where as the black beans took about 6. I always cook beans when I am home so I can check on them as I need to and I never soak them first because when I have soaked them in the past I get mixed results (usually a mushy or grainy texture).
I package them in 2 cup portions because this is approximately the size of a can of beans so you have a "can" ready to go for recipes. 1lb of beans yields about 6 cups of beans and at my store I pay $0.99 for a lb of black beans, so that is a great savings not to mention you are avoiding all the nasty stuff from the canning process!
I made enough beans yesterday for 9 servings of Turkey and Black Bean Chili, 9 servings of White Chicken Chili, 9 servings of Taco Meat, plus I have 3 "cans" left over!

I've never thought of using my crockpot for this. I usually try to quick soak them in my pot. It is cheaper - because we like to use the no-sodium canned variety and that can get expensive.
